Ingredients 

Main Ingredients

  • 6 Roma tomatoes halved
  • 1 Onion quartered
  • 2 cloves Garlic
  • 1 Jalapeño seeded and halved
  • ½ cup Cilantro chopped
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • 1 Lime juiced

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Place the tomatoes, onion, garlic, and jalapeño on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper.
  3. Roast in the oven for 20 minutes, or until the vegetables are soft and slightly charred.
  4. Remove from the oven and let cool slightly.
  5. Transfer the roasted vegetables to a blender. Add the cilantro and lime juice. Blend until smooth.
  6. Taste and adjust seasoning if needed. Serve with tortilla chips or as a topping for your favorite dishes.
