  • 1 lb Tomatillos husked and rinsed
  • 1 Jalapeño stemmed
  • 2 cloves Garlic peeled
  • 0.5 cup Cilantro chopped
  • 0.25 cup Onion chopped
  • 1 teaspoon Salt
  • 1 tablespoon Lime juice freshly squeezed

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Place the tomatillos, jalapeño, and garlic on a baking sheet. Roast for 15-20 minutes until they are soft and slightly charred.
  3. Allow the roasted ingredients to cool slightly, then transfer them to a blender.
  4. Add the cilantro, onion, salt, and lime juice to the blender. Blend until smooth.
  5. Taste and adjust seasoning if necessary. Serve immediately or refrigerate for later use.
