Ingredients

  • 2 lbs red potatoes quartered
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 tablespoon fresh dill chopped
  • 3 stalks green onions sliced

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Place the quartered red potatoes on a baking sheet. Drizzle with olive oil, and sprinkle with salt and black pepper. Toss to coat.
  3. Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and tender. Remove from the oven and let cool slightly.
  4. In a large mixing bowl, combine the mayonnaise, Dijon mustard, chopped dill, and sliced green onions.
  5. Add the roasted potatoes to the bowl and gently toss to coat with the dressing.
  6. Serve warm or chilled. Enjoy!
