  • 2 cups roasted red peppers jarred or homemade
  • 1 lb pasta any type
  • 1 cup heavy cream
  • 1 clove garlic minced
  • ½ cup Parmesan cheese grated
  • to taste salt and pepper
  • 2 tablespoon olive oil

Instructions 

  1. 1. Cook pasta according to package instructions.
  2. 2. In a blender, combine roasted red peppers, garlic, and olive oil. Blend until smooth.
  3. 3. In a saucepan, heat the red pepper sauce over medium heat. Stir in heavy cream and Parmesan cheese. Cook until heated through.
  4. 4. Toss the cooked pasta with the sauce. Season with salt and pepper to taste.
  5. 5. Serve immediately, garnished with additional Parmesan cheese if desired.
