  • 2 large red bell peppers
  • ¼ cup olive oil
  • 2 cloves garlic, minced
  • ½ cup feta cheese, crumbled
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions 

  1. Preheat your oven to 450°F (230°C).
  2. Place the red bell peppers on a baking sheet and roast for about 20 minutes, turning occasionally, until the skins are charred.
  3. Remove the peppers from the oven and place them in a bowl. Cover with plastic wrap and let them steam for 10 minutes.
  4. Peel the skins off the peppers and remove the seeds.
  5. In a food processor, combine the roasted peppers, olive oil, garlic, feta cheese, and lemon juice. Blend until smooth.
  6. Season with salt and pepper to taste.
  7. Serve with pita bread or fresh vegetables.
