Ingredients

  • 1 whole duck about 5-6 pounds
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper freshly ground
  • 2 cloves garlic minced
  • 1 tablespoon rosemary chopped

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Rinse the duck and pat it dry with paper towels.
  3. Rub the duck with olive oil, salt, and pepper.
  4. Stuff the duck with minced garlic and chopped rosemary.
  5. Place the duck in a roasting pan and roast for about 2 hours, or until the internal temperature reaches 165°F (74°C).
  6. Let the duck rest for 15 minutes before carving.
