  • 4 beets medium-sized, scrubbed clean
  • 2 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper freshly ground
  • 0.5 cup feta cheese crumbled

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Wrap each beet individually in aluminum foil and place on a baking sheet.
  3. Roast in the preheated oven for 45 minutes or until tender.
  4. Let the beets cool, then peel and cut into wedges.
  5. In a mixing bowl, toss the beet wedges with olive oil, salt, and pepper.
  6. Transfer to a serving dish and sprinkle with crumbled feta cheese.
