Roasted Beet And Goat Cheese Salad Recipe

Main Ingredients
- 4 medium beets trimmed and scrubbed
- 2 tablespoon olive oil
- 1 cup goat cheese crumbled
- 4 cups mixed greens
- ¼ cup walnuts toasted
- 2 tablespoon balsamic vinegar
- 1 pinch salt to taste
- 1 pinch black pepper to taste
Preheat oven to 400°F (200°C).
Wrap beets in aluminum foil and place on a baking sheet. Roast for 45 minutes or until tender.
Let beets cool, then peel and cut into wedges.
In a mixing bowl, toss mixed greens with olive oil and balsamic vinegar.
Top greens with roasted beets, crumbled goat cheese, and toasted walnuts.
Season with salt and black pepper to taste. Serve immediately.
