Instructions

  2. In a mixing bowl, combine the rhubarb and sugar. Let sit for 10 minutes.
  3. Add the buttermilk, baking soda, flour, and vanilla extract. Mix until just combined.
  4. Pour the batter into a greased loaf pan.
  5. Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
  6. Let cool before slicing and serving.
