Main Ingredients
- 2 cups rhubarb, chopped
- 1 cup sugar
- 1 cup buttermilk
- 1 teaspoon baking soda
- 2 cups all-purpose flour
- 1 teaspoon vanilla extract
Preheat your oven to 350°F (175°C).
In a mixing bowl, combine the rhubarb and sugar. Let sit for 10 minutes.
Add the buttermilk, baking soda, flour, and vanilla extract. Mix until just combined.
Pour the batter into a greased loaf pan.
Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
Let cool before slicing and serving.
