Ingredients

  • 2 lbs red potatoes cut into bite-sized pieces
  • ½ cup mayonnaise
  • ¼ cup dijon mustard
  • ¼ cup chopped dill pickles
  • ¼ cup chopped red onion
  • 2 tablespoon apple cider vinegar
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste
  • 2 tablespoon chopped fresh dill

Instructions 

  1. 1. Boil the red potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and let cool.
  2. 2. In a mixing bowl, combine mayonnaise, dijon mustard, chopped dill pickles, chopped red onion, apple cider vinegar, salt, and black pepper.
  3. 3. Add the cooled potatoes to the bowl and gently mix until the potatoes are well coated with the dressing.
  4. 4. Garnish with chopped fresh dill before serving.
