Quinoa Tabbouleh Recipe
A fresh and healthy twist on traditional tabbouleh using quinoa instead of bulgur.

Main Ingredients
- 1 cup quinoa rinsed
- 2 cups water
- 1 bunch parsley finely chopped
- ½ bunch mint finely chopped
- 1 cup cherry tomatoes halved
- 1 small cucumber diced
- ¼ cup olive oil
- ¼ cup lemon juice freshly squeezed
- to taste salt
- to taste black pepper
1. Rinse the quinoa under cold water.
2. In a saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes.
3. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and let it cool.
4. In a large mixing bowl, combine the cooled quinoa, parsley, mint, cherry tomatoes, and cucumber.
5. Drizzle with olive oil and lemon juice. Season with salt and black pepper to taste. Toss to combine.
6. Serve immediately or refrigerate for later.
