Instructions
Preheat your oven to 375°F (190°C).
Cook the quinoa in vegetable broth according to package instructions.
In a large mixing bowl, combine cooked quinoa, black beans, corn, onion, garlic, cumin, chili powder, salt, and black pepper.
Stuff the bell peppers with the quinoa mixture and place them in a baking dish.
Bake for 25-30 minutes until the peppers are tender.
