Ingredients 

Main Ingredients

  • 4 bell peppers tops cut off and seeds removed
  • 1 cup quinoa cooked
  • 1 cup black beans rinsed and drained
  • 1 cup corn cooked
  • 1 cup diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup shredded cheese optional
  • to taste salt and pepper

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, combine cooked quinoa, black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper.
  3. Stuff the bell peppers with the quinoa mixture.
  4. Place stuffed peppers in a baking dish and cover with foil.
  5. Bake for 25-30 minutes, until peppers are tender.
  6. If using cheese, remove foil, sprinkle cheese on top, and bake for an additional 5 minutes until cheese is melted.
  7. Serve hot.
