Ingredients 

Main Ingredients

  • 1 cup Quinoa rinsed
  • 1 can Black Beans drained and rinsed
  • 1 cup Corn cooked
  • 1 cup Cherry Tomatoes halved
  • 1 medium Red Bell Pepper diced
  • 1 small Red Onion diced
  • ¼ cup Cilantro chopped
  • 2 tablespoon Olive Oil
  • 1 tablespoon Lime Juice freshly squeezed
  • 1 teaspoon Cumin
  • ½ teaspoon Salt
  • ¼ teaspoon Black Pepper

Instructions 

  1. 1. Cook quinoa according to package instructions. Let it cool.
  2. 2. In a large mixing bowl, combine black beans, corn, cherry tomatoes, red bell pepper, red onion, and cilantro.
  3. 3. Add the cooled quinoa to the bowl and mix well.
  4. 4. In a small bowl, whisk together olive oil, lime juice, cumin, salt, and black pepper.
  5. 5. Pour the dressing over the salad and toss to combine.
  6. 6. Serve immediately or refrigerate for later.
