Shredded cheese (Oaxaca, Monterey Jack, or a mix)

Chorizo, cooked and crumbled

Onion, finely chopped

Instructions
Preheat your oven to 375°F (190°C).
In a skillet, cook the chorizo over medium heat until browned and crispy. Remove and set aside.
In the same skillet, add the chopped onion and cook until translucent. Add the garlic and cook for another minute.
Add the tomato and cook until softened. Season with salt and pepper.
Remove the skillet from heat and stir in the cooked chorizo.
Spread the shredded cheese evenly over the chorizo mixture.
Place the skillet in the preheated oven and bake until the cheese is melted and bubbly, about 10 minutes.
Remove from the oven and sprinkle with chopped cilantro. Serve immediately with tortilla chips or warm tortillas.
