Ingredients 

Crust

  • 1.5 cups Graham cracker crumbs
  • 0.25 cup Sugar
  • 0.5 cup Melted butter

Filling

  • 24 oz Cream cheese softened
  • 1 cup Sugar
  • 1 teaspoon Vanilla extract
  • 1 cup Pumpkin puree
  • 3 large Eggs
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground ginger
  • 0.25 teaspoon Ground nutmeg

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add vanilla and pumpkin puree, and mix until combined.
  4. Add eggs one at a time, beating well after each addition. Stir in cinnamon, ginger, and nutmeg.
  5. Pour filling over crust. Bake for 60 minutes or until the center is set. Cool before removing from the pan.
