Pumpkin Cheesecake Bars

Crust
- 1.5 cups Graham Cracker Crumbs
- ¼ cup Sugar
- ½ cup Melted Butter
Filling
- 16 oz Cream Cheese softened
- 1 cup Pumpkin Puree
- 1 cup Sugar
- 3 Eggs
- 1 teaspoon Vanilla Extract
- 1 teaspoon Pumpkin Pie Spice
Preheat oven to 350°F (175°C).
Mix graham cracker crumbs, sugar, and melted butter in a bowl. Press mixture into the bottom of a baking pan.
In a large bowl, beat cream cheese until smooth. Add pumpkin puree, sugar, eggs, vanilla extract, and pumpkin pie spice. Mix until well combined.
Pour filling over crust in the baking pan. Bake for 50 minutes or until set.
Let cool completely before cutting into bars. Refrigerate for at least 2 hours before serving.
