Potato Skins Recipe
Delicious and crispy potato skins perfect for a snack or appetizer.

Main Ingredients
- 4 large Russet Potatoes
- 2 tablespoon Olive Oil
- 1 cup Cheddar Cheese shredded
- 4 slices Bacon cooked and crumbled
- 0.5 cup Sour Cream
- 2 tablespoon Chives chopped
- to taste Salt
- to taste Black Pepper
Preheat your oven to 400°F (200°C).
Scrub the potatoes clean and pierce them a few times with a fork. Bake them in the oven for about 45 minutes or until tender.
Once the potatoes are cool enough to handle, cut them in half lengthwise and scoop out most of the flesh, leaving a bit to keep the skins sturdy.
Brush the potato skins with olive oil, inside and out. Sprinkle with salt and pepper.
Place the skins back in the oven, skin-side down, and bake for another 10 minutes until they start to get crispy.
Remove from the oven and sprinkle the insides with cheddar cheese and crumbled bacon. Return to the oven until the cheese is melted and bubbly, about 5 minutes.
Top with sour cream and chopped chives. Serve immediately.
