- 2 cups mashed potatoes
- 1 cup bread crumbs
- 1 egg beaten
- ½ cup grated cheese
- ¼ cup chopped parsley
- to taste salt and pepper
- as needed oil for frying
1. In a mixing bowl, combine mashed potatoes, grated cheese, chopped parsley, salt, and pepper.
2. Shape the mixture into small balls or patties.
3. Dip each ball or patty into the beaten egg, then coat with bread crumbs.
4. Heat oil in a frying pan over medium heat.
5. Fry the croquettes until golden brown on all sides, about 3-4 minutes per side.
6. Remove and drain on paper towels. Serve hot.
