  • 1 cup mashed potatoes leftover or freshly made
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • ½ cup butter cold and cubed
  • ½ cup milk

Instructions 

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, combine the flour, baking powder, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Add the mashed potatoes and milk, stirring until just combined.
  5. Turn the dough out onto a floured surface and knead gently.
  6. Roll out to about ½ inch thick and cut with a biscuit cutter.
  7. Place biscuits on a baking sheet and bake for 15-20 minutes or until golden brown.
