  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 potatoes, cubed
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup diced tomatoes
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add pork and brown on all sides.
  2. Add onion, carrots, and garlic. Cook until vegetables are softened.
  3. Stir in potatoes, chicken broth, diced tomatoes, and thyme. Bring to a boil.
  4. Reduce heat, cover, and simmer for 1 hour or until pork is tender.
  5. Season with salt and pepper to taste.
