Ingredients 

Main Ingredients

  • 4 pork chops
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 6 cups chicken broth
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme

Instructions 

  1. 1. Heat a large pot over medium heat. Add a bit of oil and sear the pork chops on both sides until browned. Remove and set aside.
  2. 2. In the same pot, add the diced onion and minced garlic. Sauté until the onion is translucent.
  3. 3. Add the sliced carrots and diced potatoes to the pot. Stir well.
  4. 4. Pour in the chicken broth and bring to a boil.
  5. 5. Return the pork chops to the pot. Add salt, black pepper, and dried thyme. Reduce heat and let it simmer for about 30 minutes or until the vegetables are tender and the pork is cooked through.
  6. 6. Adjust seasoning if necessary. Serve hot.
