Ingredients 

Dough

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup water warm
  • 1 tablespoon vegetable oil

Filling

  • 2 cups mashed potatoes
  • 1 cup cheddar cheese shredded
  • 1 medium onion finely chopped
  • 1 tablespoon butter

Instructions 

  1. Mix flour and salt in a bowl. Add warm water and oil, mix until dough forms. Knead until smooth. Let rest for 30 minutes.
  2. For filling, sauté onions in butter until golden. Mix with mashed potatoes and cheese.
  3. Roll out dough on a floured surface. Cut into circles. Place filling in center, fold and seal edges.
  4. Boil perogies in salted water until they float. Drain. Optionally, fry in butter until golden.
