  • 4 medium beets peeled and sliced
  • 1 cup vinegar
  • ½ cup water
  • ½ cup sugar
  • 1 teaspoon salt

Instructions 

  1. 1. Boil the beets until tender, about 30 minutes.
  2. 2. Peel and slice the beets.
  3. 3. In a pot, combine vinegar, water, sugar, and salt. Bring to a boil.
  4. 4. Add the sliced beets to the pot and simmer for 5 minutes.
  5. 5. Transfer the beets and liquid to a jar. Let cool, then refrigerate.
