Peruvian Lomo Saltado Recipe
A classic Peruvian stir-fry combining marinated beef, onions, tomatoes, and French fries.

- 1 lb beef sirloin sliced into strips
- 1 large red onion sliced
- 2 tomatoes sliced into wedges
- 1 yellow chili pepper sliced
- 2 tablespoon soy sauce
- 2 tablespoon vinegar
- 1 cup French fries cooked
- 2 tablespoon vegetable oil
- 1 bunch cilantro chopped
- to taste salt and pepper
1. Heat oil in a wok or large skillet over high heat.
2. Add beef and cook until browned, about 2-3 minutes.
3. Add onions, tomatoes, and chili pepper. Stir-fry for another 2-3 minutes.
4. Pour in soy sauce and vinegar. Cook for another minute.
5. Add cooked French fries and toss everything together.
6. Season with salt and pepper to taste. Garnish with chopped cilantro before serving.
