Peruvian Causa Recipe
A delicious and vibrant Peruvian dish made with layers of seasoned mashed potatoes, avocado, and chicken or tuna filling.

Main Ingredients
- 4 large yellow potatoes peeled
- 2 tablespoon aji amarillo paste
- 1 tablespoon lime juice freshly squeezed
- 2 tablespoon vegetable oil
- 1 cup cooked chicken shredded
- 1 cup mayonnaise
- 1 avocado sliced
- 1 hard-boiled egg sliced
- to taste salt
- to taste pepper
Boil the potatoes until tender, about 20 minutes. Drain and mash them while still hot.
Mix the mashed potatoes with aji amarillo paste, lime juice, vegetable oil, salt, and pepper. Let it cool.
In a bowl, mix the shredded chicken with mayonnaise. Season with salt and pepper.
In a serving dish, spread a layer of the potato mixture, followed by a layer of avocado slices, then the chicken mixture. Repeat the layers, ending with a layer of potato mixture.
Garnish with sliced hard-boiled eggs and serve chilled.
