Ingredients 

Main Ingredients

  • 1 cup pearl couscous
  • 1 ¼ cups water
  • ½ teaspoon salt
  • 1 cup cherry tomatoes, halved
  • ½ cup cucumber, diced
  • ¼ cup red onion, finely chopped
  • ¼ cup feta cheese, crumbled
  • 2 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)

Instructions 

  1. Cook couscous: In a medium saucepan, bring water and salt to a boil. Add couscous, reduce heat, cover, and simmer for 10 minutes or until water is absorbed. Fluff with a fork and let cool.
  2. Prepare vegetables: While couscous is cooling, chop cherry tomatoes, cucumber, and red onion.
  3. Mix salad: In a large bowl, combine cooked couscous, cherry tomatoes, cucumber, red onion, and feta cheese.
  4. Dress salad: Drizzle olive oil and lemon juice over the salad. Season with salt and pepper to taste. Toss to combine.
  5. Serve: Garnish with fresh parsley if desired. Serve chilled or at room temperature.
