Pie Crust
- 2 cups all-purpose flour
- 1 cup unsalted butter cold and cubed
- ¼ cup ice water
Filling
- 6 peaches peeled and sliced
- 1 cup granulated sugar
- ¼ cup all-purpose flour
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 1 egg beaten (for egg wash)
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine flour and butter for the crust. Add ice water and mix until dough forms. Divide into two discs and refrigerate for 30 minutes.
Roll out one disc of dough and place it in the pie dish. In another bowl, mix peaches, sugar, flour, cinnamon, and nutmeg. Pour filling into the crust.
Roll out the second disc of dough and place it over the filling. Trim and crimp the edges. Brush with beaten egg.
Bake for 60 minutes or until the crust is golden brown. Let it cool before serving.
