  • 4 Peaches halved and pitted
  • 1 cup Raspberries fresh or frozen
  • ½ cup Sugar
  • 1 teaspoon Lemon juice freshly squeezed
  • 1 pint Vanilla ice cream

Instructions 

  1. 1. In a saucepan, combine raspberries, sugar, and lemon juice. Cook over medium heat until raspberries break down and sauce thickens, about 10 minutes.
  2. 2. Blend the raspberry mixture until smooth, then strain through a sieve to remove seeds. Set aside to cool.
  3. 3. Poach the peach halves in boiling water for 2-3 minutes until tender. Remove and let cool.
  4. 4. To serve, place two peach halves in a bowl, top with a scoop of vanilla ice cream, and drizzle with raspberry sauce.
