Ingredients 

Pastry

  • 500 g plain flour
  • 250 g unsalted butter cold, diced
  • 1 pinch salt
  • 6-8 tablespoon cold water

Filling

  • 400 g beef skirt diced
  • 300 g potatoes peeled and diced
  • 150 g swede peeled and diced
  • 1 onion finely chopped
  • 1 pinch salt and pepper to taste
  • 1 egg beaten, for glazing

Instructions 

  1. 1. Preheat your oven to 200°C (400°F).
  2. 2. In a mixing bowl, combine the flour and salt. Rub in the butter until the mixture resembles breadcrumbs.
  3. 3. Add cold water a tablespoon at a time until the dough comes together. Wrap in cling film and chill for 30 minutes.
  4. 4. Roll out the pastry and cut into circles (about 20cm in diameter).
  5. 5. Mix the beef, potatoes, swede, and onion in a bowl. Season with salt and pepper.
  6. 6. Place a handful of the filling mixture onto one half of each pastry circle. Brush the edges with beaten egg, fold over, and crimp to seal.
  7. 7. Place the pasties on a baking tray, brush with the remaining beaten egg, and bake for 50-60 minutes until golden brown.
