Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots carrots, diced
  • 2 stalks celery, diced
  • 1 can diced tomatoes
  • 1 can cannellini beans, drained and rinsed
  • 4 cups chicken broth
  • 1 cup ditalini pasta
  • to taste salt and pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ¼ cup grated Parmesan cheese for serving

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, carrots, and celery. Cook until softened.
  3. Add diced tomatoes, beans, and chicken broth. Bring to a boil.
  4. Add pasta and cook until al dente.
  5. Season with salt, pepper, oregano, and basil. Serve with grated Parmesan.
