  • 4 large russet potatoes
  • 2 tablespoons truffle oil
  • ½ cup grated Parmesan cheese
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1 tablespoon chopped fresh parsley optional

Instructions 

  1. Preheat your oven to 425°F (220°C).
  2. Wash and cut the potatoes into thin strips.
  3. Toss the potato strips in a bowl with truffle oil, salt, and pepper.
  4. Spread the potatoes in a single layer on a baking sheet.
  5. Bake for 25-30 minutes, turning halfway through, until golden and crispy.
  6. Remove from the oven and sprinkle with Parmesan cheese and parsley.
  7. Serve immediately.
