Ingredients 

Main Ingredients

  • 4 large Potatoes peeled and boiled
  • 1 cup Queso fresco crumbled
  • 1 cup Evaporated milk
  • 2 tablespoon Aji amarillo paste
  • 4 each Saltine crackers crushed
  • 2 tablespoon Vegetable oil
  • 1 clove Garlic minced
  • to taste Salt
  • to taste Black pepper

Instructions 

  1. 1. Boil the potatoes until tender. Let them cool, then peel and slice them.
  2. 2. In a blender, combine queso fresco, evaporated milk, aji amarillo paste, crushed saltine crackers, vegetable oil, and minced garlic. Blend until smooth.
  3. 3. Season the sauce with salt and black pepper to taste.
  4. 4. Arrange the potato slices on a serving plate and pour the sauce over them.
  5. 5. Serve chilled or at room temperature.
