Ingredients

  • 4 cups stale bread, cubed preferably Italian or French bread
  • 2 cups cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ cup red onion, thinly sliced
  • ¼ cup fresh basil, chopped
  • ¼ cup extra virgin olive oil
  • 2 tablespoon red wine vinegar
  • to taste salt and pepper

Instructions 

  1. In a large mixing bowl, combine the bread, tomatoes, cucumber, red onion, and basil.
  2. Drizzle with olive oil and red wine vinegar. Season with salt and pepper to taste.
  3. Toss everything together until well combined. Let the salad sit for about 10 minutes before serving to allow the bread to soak up the flavors.
