- 1 pound okra cut into ½ inch pieces
- 1 cup cornmeal
- ½ cup all-purpose flour
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika
- 2 large eggs beaten
- 2 tablespoons olive oil
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
In a mixing bowl, combine the cornmeal, flour, salt, pepper, and paprika.
Dip the okra pieces into the beaten eggs, then coat with the cornmeal mixture.
Place the coated okra on the prepared baking sheet. Drizzle with olive oil.
Bake for 25-30 minutes, turning halfway through, until golden and crispy.
