Old Fashioned Raisin Pie

Filling
- 2 cups raisins
- 1 cup water
- 1 cup sugar
- 3 tablespoons cornstarch
- 1 teaspoon cinnamon
- ¼ teaspoon salt
- 1 tablespoon lemon juice
- 2 tablespoons butter
Crust
- 1 double pie crust store-bought or homemade
Preheat your oven to 425°F (220°C).
In a saucepan, combine raisins and water. Cook over medium heat until raisins are plump, about 10 minutes.
In a bowl, mix sugar, cornstarch, cinnamon, and salt. Stir into the raisin mixture. Cook and stir until the mixture thickens and bubbles. Remove from heat and stir in lemon juice and butter.
Roll out half of the pie crust and fit into a 9-inch pie dish. Pour the raisin filling into the crust.
Roll out the remaining crust and place over the filling. Seal and flute the edges. Cut slits in the top crust to allow steam to escape.
Bake in the preheated oven for 30 to 35 minutes, or until the crust is golden brown. Cool before serving.
