Main Ingredients
- 2 cups okra, finely chopped
- 1 cup cornmeal
- ½ cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 egg, beaten
- ½ cup milk
- ¼ cup vegetable oil (for frying)
In a mixing bowl, combine the chopped okra, cornmeal, flour, baking powder, salt, and black pepper.
Add the beaten egg and milk to the dry ingredients and mix until well combined.
Heat the vegetable oil in a frying pan over medium heat.
Scoop spoonfuls of the batter into the hot oil, flattening them slightly with the back of the spoon.
Fry the patties for about 3-4 minutes on each side, or until golden brown and crispy.
Remove the patties from the pan and drain on paper towels. Serve hot.
