Ingredients 

Main Ingredients

  • 1 cup rolled oats
  • 1 cup milk
  • 1 cup all-purpose flour
  • ½ cup brown sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • ¼ cup vegetable oil
  • 1 egg

Instructions 

  1. Preheat oven to 400°F (200°C). Grease a muffin tin or line with paper liners.
  2. In a bowl, combine oats and milk. Let stand for 10 minutes.
  3. In another bowl, mix flour, brown sugar, baking powder, baking soda, salt, and cinnamon.
  4. Add oil and egg to the oat mixture; mix well.
  5. Stir in the dry ingredients until just combined.
  6. Fill muffin cups ⅔ full.
  7. Bake for 20 minutes or until a toothpick comes out clean.
  8. Cool in the pan for 5 minutes, then transfer to a wire rack.
