Ingredients

  • 4 cups russet potatoes peeled and cubed
  • ¼ cup butter melted
  • ½ cup heavy cream
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 ½ cups all-purpose flour plus extra for rolling

Instructions 

  1. 1. Boil the potatoes until tender, about 15 minutes. Drain and rice the potatoes.
  2. 2. Mix the riced potatoes with butter, cream, sugar, and salt. Let cool.
  3. 3. Gradually add the flour to the potato mixture until a dough forms.
  4. 4. Divide the dough into small balls. Roll each ball out on a floured surface to about ⅛ inch thick.
  5. 5. Cook on a hot, ungreased griddle until brown spots appear, about 1-2 minutes per side.
