Instructions
Rinse the sushi rice under cold water until the water runs clear.
Combine rice and water in a rice cooker and cook according to the manufacturer's instructions.
In a small saucepan, combine rice vinegar, sugar, and salt. Heat until sugar and salt dissolve. Let cool.
Once rice is cooked, transfer to a large bowl and gently fold in the vinegar mixture. Let rice cool to room temperature.
Slice the fish into thin pieces.
Wet your hands with water, take a small amount of rice, and shape it into an oval.
Place a slice of fish on top of the rice and press gently.
Serve with wasabi and soy sauce.
