Ingredients 

Dough

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup water cold
  • 2 tablespoon vegetable oil

Filling

  • 4 cups mashed potatoes
  • 1 cup finely chopped onions sautéed
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine flour, baking powder, and salt. Add cold water and vegetable oil. Mix until a dough forms.
  3. On a floured surface, knead the dough until smooth. Cover and let it rest for 30 minutes.
  4. In another bowl, mix mashed potatoes, sautéed onions, salt, and black pepper for the filling.
  5. Roll out the dough to about ⅛ inch thick. Cut into 4-inch squares.
  6. Place a spoonful of filling in the center of each square. Fold the corners to the center and pinch to seal.
  7. Place knishes on a baking sheet and bake for 45 minutes or until golden brown.
