Ingredients

  • 1 cup white vinegar
  • 1 cup water
  • ½ cup sugar
  • 2 tablespoon mustard seeds
  • 1 tablespoon turmeric
  • 1 tablespoon salt
  • 4 cups mixed vegetables (cauliflower, cucumber, onions) chopped

Instructions 

  1. In a saucepan, combine vinegar, water, sugar, mustard seeds, turmeric, and salt. Bring to a boil.
  2. Reduce heat and simmer for 5 minutes.
  3. Place chopped vegetables in a mixing bowl.
  4. Pour hot vinegar mixture over vegetables. Let it cool.
  5. Transfer pickles to jars and refrigerate for at least 24 hours before serving.
