Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 500 g mushrooms, sliced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • to taste salt and pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent, about 5 minutes.
  3. Add minced garlic and cook for another minute.
  4. Add sliced mushrooms and cook until they release their juices, about 10 minutes.
  5. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes.
  6. Use a blender to puree the soup until smooth.
  7. Return the soup to the pot, stir in the heavy cream, and season with salt and pepper to taste.
  8. Serve hot.
