Ingredients

  • 1 cup pearl barley
  • 2 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 4 cups vegetable broth
  • 2 cups water
  • 2 stalks celery, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat.
  2. 2. Add the chopped onion and garlic, sauté until softened.
  3. 3. Add the sliced mushrooms and cook until they release their moisture.
  4. 4. Stir in the carrots and celery, cook for a few more minutes.
  5. 5. Add the pearl barley, vegetable broth, water, dried thyme, salt, and pepper.
  6. 6. Bring to a boil, then reduce heat and simmer for about 45 minutes, or until the barley is tender.
  7. 7. Adjust seasoning if necessary and serve hot.
