Ingredients

  • 1 cup chopped mushrooms
  • 1 cup diced tomatoes
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 loaf baguette, sliced
  • to taste salt and pepper
  • 1 tablespoon balsamic vinegar

Instructions 

  1. 1. Preheat your oven to 400°F (200°C).
  2. 2. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  3. 3. Add the chopped mushrooms and cook for 5-7 minutes until they are tender.
  4. 4. Add the diced tomatoes to the skillet and cook for another 2-3 minutes. Season with salt and pepper to taste.
  5. 5. Place the baguette slices on a baking sheet and toast in the preheated oven for 5-7 minutes until golden brown.
  6. 6. Spoon the mushroom and tomato mixture onto the toasted baguette slices. Drizzle with balsamic vinegar and serve warm.
