Ingredients 

Crust

  • 1 cup Graham cracker crumbs
  • 2 tablespoon Sugar
  • 4 tablespoon Butter, melted

Filling

  • 16 oz Cream cheese, softened
  • cup Sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla extract

Instructions 

  1. Preheat oven to 325°F (160°C). Line a muffin tin with paper liners.
  2. In a mixing bowl, combine graham cracker crumbs, 2 tablespoon sugar, and melted butter. Press mixture into the bottom of each muffin liner.
  3. In another bowl, beat cream cheese and ⅔ cup sugar until smooth. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  4. Spoon cream cheese mixture over crusts. Bake for 20 minutes or until set. Cool completely before serving.
