Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can diced tomatoes
  • 1 can kidney beans, drained and rinsed
  • 1 can cannellini beans, drained and rinsed
  • 1 zucchini, diced
  • 1 yellow squash, diced
  • 6 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 cup small pasta (like ditalini)
  • to taste salt and pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, cook until softened.
  2. Add carrots and celery, cook for another 5 minutes.
  3. Stir in diced tomatoes, beans, zucchini, yellow squash, vegetable broth, oregano, and basil. Bring to a boil.
  4. Reduce heat and simmer for 20 minutes.
  5. Add pasta and cook until tender, about 10 minutes. Season with salt and pepper to taste.
