Main Ingredients
- 2 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 can diced tomatoes
- 1 can kidney beans, drained and rinsed
- 1 can cannellini beans, drained and rinsed
- 1 zucchini, diced
- 1 yellow squash, diced
- 6 cups vegetable broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 cup small pasta (like ditalini)
- to taste salt and pepper
Heat olive oil in a large pot over medium heat. Add onion and garlic, cook until softened.
Add carrots and celery, cook for another 5 minutes.
Stir in diced tomatoes, beans, zucchini, yellow squash, vegetable broth, oregano, and basil. Bring to a boil.
Reduce heat and simmer for 20 minutes.
Add pasta and cook until tender, about 10 minutes. Season with salt and pepper to taste.
