Ingredients

  • 4 cups Stale bread, cubed Preferably a day or two old
  • 4 Eggs Beaten
  • 1 cup Chorizo, diced
  • 1 cup Bell pepper, diced
  • 1 cup Onion, diced
  • 2 cloves Garlic, minced
  • 2 tablespoon Olive oil
  • to taste Salt and pepper

Instructions 

  1. 1. Heat the olive oil in a large skillet over medium heat.
  2. 2. Add the diced chorizo and cook until it starts to brown.
  3. 3. Add the diced onion, bell pepper, and minced garlic. Cook until the vegetables are soft.
  4. 4. Add the cubed stale bread to the skillet. Stir well to combine with the other ingredients.
  5. 5. Pour the beaten eggs over the bread mixture. Stir constantly until the eggs are fully cooked.
  6. 6. Season with salt and pepper to taste. Serve hot.
