Mexican Stuffed Peppers Recipe

Main Ingredients
- 4 bell peppers tops cut off and seeds removed
- 1 lb ground beef
- 1 cup cooked rice
- 1 onion chopped
- 1 cup tomato sauce
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 cup shredded cheese cheddar or Mexican blend
- to taste salt and pepper
Preheat your oven to 375°F (190°C).
In a skillet, cook the ground beef and chopped onion over medium heat until the beef is browned and the onion is soft.
Stir in the cooked rice, tomato sauce, chili powder, cumin, salt, and pepper. Cook for a few more minutes until everything is well combined and heated through.
Stuff each bell pepper with the beef and rice mixture, and place them in a baking dish.
Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
Remove the foil, sprinkle the shredded cheese on top of each pepper, and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
