  • 4 ears corn, shucked
  • 1 cup cotija cheese, crumbled
  • ¼ cup mayonnaise
  • ¼ cup cilantro, chopped
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions 

  1. 1. Heat a skillet over medium-high heat. Add the corn and cook, turning occasionally, until charred in spots, about 10 minutes.
  2. 2. Remove the corn from the skillet and let it cool. Cut the kernels off the cob and place them in a large mixing bowl.
  3. 3. Add the cotija cheese, mayonnaise, cilantro, lime juice, chili powder, salt, and black pepper to the bowl. Mix well to combine.
  4. 4. Serve immediately or refrigerate until ready to serve.
